Since Dio sources its wines exclusively from closed-loop producers, the staff is well versed in the process. It essentially means that these vineyards don’t outsource any step of the grape-growing process; they use their own compost and water to cultivate their grapes. This ensures total control over the produce and, ultimately, the wine that results.

Its carefully curated wine list offers a handful of each type of vino, from classic reds and whites to sweeter pours and bubbly bottles. Although the space is relatively small, the soaring ceilings and vintage light fixtures make it feel much roomier.
